Season : From August to January (February-March in the USA)

Habitat : Grows in tufts in dark and humid spots of leafy forests.

Taste : Pleasant, pronounced, slightly smokey.

Cooking tips :

With cream, in an omelette, with roasted meats, in patés. Goes well with white meats, fish and strong meats such as game.
